Finca Ecologica, Peru

Finca Ecológica is a coffee farm run by Gilmer Córdova in Huabal, part of Peru’s Cajamarca region. Located in the mountainous north of the country, Cajamarca has become an important origin for specialty coffee, known for its high-altitude farms, small-scale producers, and distinctive microlots.

The region’s steep terrain and varied microclimates create favourable conditions for growing Arabica coffee. Cooler mountain temperatures allow coffee cherries to mature gradually, supporting the development of sweetness, acidity, and aromatic complexity.

A focus on Gesha

One of Finca Ecológica’s most interesting coffees is its Gesha, a variety valued for its delicate floral character, complex aromatics, and elegant acidity. Originally from Ethiopia, Gesha has gained international recognition for its distinctive cup profile and is now cultivated by selected producers across Latin America.

At Finca Ecológica, Gesha is produced as a small, traceable microlot, highlighting the individual character of the farm rather than blending it into larger regional lots.

Coffee processing

The farm’s Gesha is processed using the washed method, which emphasises clarity and allows the variety’s natural characteristics to stand out.

The resulting coffee can display floral notes, citrus, stone fruit, and refined sweetness. It is an example of the growing diversity of Peruvian specialty coffee, where individual producers are increasingly recognised for the quality and identity of their harvests.
