Akagera washing station
Akagera is one of Baho's smaller stations, with only about 460 farmers delivering cherries. This means the team can focus laser-like on quality, ensuring every bean meets high standards. The perfectly sorted cherries are placed into plastic barrels or clay pots. For this lot, it's a wet anaerobic fermentation (with a small amount of water added). These containers are sealed (without oxygen inside!) and placed in the shade for either 72, 100, or 120 hours.
